Pork Adobo – This Filipino Pork Adobo is made with pieces of pork that are cooked in soy sauce, vinegar, and garlic. The sauce is rich and tasty and perfect served over rice!
We love trying food from different countries around the work, but Filipino food is one that we haven’t had a ton of experience with. I think Vietnamese Egg Rolls are probably the closest thing I have ever made on the blog, and even that is a stretch.
Before finding this easy pork adobo recipe I had only had it with chicken before and it is always delicious. The sauce is rich and tangy and you just want more of it!

Recently we were on a cruise where one of wait staff was from the Philippines, and she was telling us about adobo and how good it was. I was motivated as soon as we got home to make it! And it did not disappoint!
What is Filipino Adobo
It is a popular dish that involves cooking meat in soy sauce, vinegar, garlic and peppercorns. You can use pork, chicken or even seafood for this dish. The meat cooks in the sauce for a long time and becomes so tender and juicy!

Pork Adobo Ingredients
- Pork Butt or Pork Shoulder
- Soy Sauce
- White Vinegar
- Vegetable Oil
- Garlic
- Bay Leaves
- Peppercorns
- Water

How to Make Pork Adobo
- The first step is to sear the meat in oil. I used pork butt that was cut into about 2 inch cubes. You heat a large pot over high heat and brown the meat in oil. It is best to do this in batches.
- Once the meat is seared you add all the ingredients for the sauce and let it simmer for at least and hour. You want to slowly cook the pork so the fat breaks down and the meat gets super tender.
- I like to simmer with the lid on for about an hour, and then remove the lid and let the sauce cook down for the last 30-45 minutes so it gets nice and rich.
- Adobo is best served over rice

So if you want to break out of your normal Asian dishes like Chicken Lo Mein, this is the dish to do it with. It does take time to let the sauce cook and really flavor the meat. But it is so worth it! Plus the leftovers are amazing the next day.
This Pork Adobo recipe really is just a handful of basic ingredients you probably already have, just put together in a new way. So you can travel around the world for dinner and now even have to go to a specialty grocery store to get the ingredients. Those are my favorite kind of meals!

Pork Adobo Recipe
Pork Adobo - This Filipino Pork Adobo is made with pieces of pork that are cooked in soy sauce, vinegar, and garlic. The sauce is rich and tasty and perfect served over rice!

Ingredients
- 2 pounds pork butt or pork shoulder, cut into 2 inch cubes
- 2 Tbls vegetable oil
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 3 cloves garlic, minced
- 2 bay leaves
- 1 tsp black peppercorns
- 1/2 cup water
Instructions
- In a large pot heat oil over high heat. Add the meat in batches and brown on all sides.
- Once all the meat is browned add everything (including all the meat) to the pot. Bring to a boil. Cover and reduce heat to simmer for 1 hour.
- After 1 hour, remove the lid and continue to simmer for 30 minutes until the liquid is reduced by half.
- Serve over cooked white rice .
