Now, I know I call this a recipe, buuuuuut…this isn’t really a recipe… per se. More like a really awesome combination of ingredients that will be perfect for all those summer BBQ’s you plan on having.

And trust me. You’ll want this Seattle Hot Dog Recipe to make an appearance…or two.

Seattle Hot Dog Recipe - w/ Bacon Cream Cheese & Chips (3)Trevor and I have lived in Seattle for 3 years now! The time has just flown by. During that 3 years, Trevor and I have experienced tonsof Seattle favorites: plenty of fresh seafood…especially salmon, Tom Douglas (yes, that’s it’s own food category 😉 ), far too much coffee, Rainier cherries, local beer, and have gone to more food festivals than I’d care to admit.I also won’t admit that I have a calendarof Seattle summer food events, because that would make me sound totally lame and food obsessed.

Ummm…moving along.

Through all of our amazing food experiences, however, we still haven’t tried the beloved Seattle Hot Dog.

Seattle Hot Dog Recipe - w/ Bacon Cream Cheese & Chips (4)I’ve heard through the grapevine that the best Seattle hot dogs come out after the bars close on the weekends. Since Trevor and I are far too sleepy on the weekends to stay up that late, I decided to make my own at home.

But wait. What’s a Seattle Hot Dog?

Let me keep it simple: hot dog + cream cheese + caramelized onions+ other toppings.

Seattle Hot Dog Recipe - w/ Bacon Cream Cheese & Chips (5)Whaaat? Cream cheese on a hot dog? Seriously. Don’t knock it ’til you’ve tried it. It’s dreeeamy, especially since I added my own twist and used BACON cream cheese. Oh and my “other toppings”, included jalapeño kettle chips. Yep! I went there.

Seattle Hot Dog Recipe - w/ Bacon Cream Cheese & Chips (6)This Seattle hot dog recipe startsbyslowly caramelizing some onions in a touch of butter. When the caramelized onions arealmost done, de-glaze (get the brown bitsoff) the pan with a couple healthy splashesof white wine. Butter, onions, and wine are my new favorite.♡

Seattle Hot Dog Recipe - w/ Bacon Cream Cheese & Chips (7)Trevor is the grill master in our household, so once the onions weredone, he threw the jalapeño peppers on the grill. He cooked them until the were nice and charred.

Then, you know, cookthe hot dogs and toast the buns.

Seattle Hot Dog Recipe - w/ Bacon Cream Cheese & Chips (8)Now comes the fun part.

Assemble the Seattle hot dogs by smearing a generous dollop of that almost too good to be true, delicious bacon cream cheese on the lightly toasted bun. Then place the hot dog on the bun, and the caramelized onions and jalapeños on top of that.

After that, you can decide what other toppings sound good to you! Trevor and I loved these with a little squirt of yellow mustard, but I’ve also heard people useSriracha for an extra spicy kick!

But THEN. After I took my first bite, I thought the hot dog could use some texture, so I had the brilliant ( 😉 ) idea of crushing some jalapeño kettle chips and scattering them on top of my hot dog.

Seriously. Do it. It’s life changing. It was so life changing that I didn’t actually get photos of it, because it was too delicious. Oops. 🙂

Seattle Hot Dog Recipe - w/ Bacon Cream Cheese & Chips (9)This Seattle hot dog recipe has turned me from a hot dog liker to a hot dog L.O.V.E.R.♡ A lightly toasted hot dog bun piled with an all beef hot dog, slowly caramelized onions, smokey cream cheese, spicy jalapeños, and don’t forget about those salty kettle chips for some crunch!
